A lot of it depends on the scoring of your league and how heavily certain positions are weighted. For instance, my league has an added bonus point for every completed catch a receiver makes... this makes good receivers as valuable as good running backs (because a 10 catch, 60 yard game with one TD is worth 22 points). Your QB position seems solid, as does your kicker and defense. Your TE position seems a bit weak with only one player (I would have picked one up with a throw away pick at the end to cover your bye week... though Davis doesn't have a bye until 6), and an average one at that. You have pretty good one-two punches at both WR and RB, but who will you use for your flex position? I'd say Peterson, but he seems a bit average at flex (in my opinion). You're overloaded at the WR position -- are you looking to trade? Even if you use a WR at flex, you'll have three backups and unless you have all three starting WRs on bye together (bad planning if you do), you won't need that many. They're taking up roster spots that could be used to give that TE a break (especially if SFO is playing a good defense, like the Panthers, Ravens or Steelers), or to provide solid insurance against catastrophe at the QB position. Vince Young is a capable backup, but what happens if McNabb goes down? He hasn't played a full, 16-game season since 2003 so the odds aren't really on his side. If McNabb does go down, you'll be scrambling to find someone to backup Young if he's playing a tough defense or goes on bye.
